Sapin-Sapin

This was originated from Abra. Just wondering if the word "sapin" that means "a covering" was the origin.

Ingredients: 2 c rice flour, 2-1/2 c sugar (white), 
5 c coconut milk (thick), 1 c boiled ube (yam), mashed

* food color (optional), toasted (grated coconut) as desired, latik (residue from coconut oil extraction)

Procedure:

  1. Combine rice flour, sugar and coconut milk.
  2. Divide into three portions.
  3. To one portion, add the ube.
  4. Pour into banana leaf-lined steamer and steam until firm (this is the first layer).
  5. To another portion, add red food color and pour over the steamed first layer. Steam until the second layer is firm again.
  6. Pour the third portion on top of the red layer and steam until done.
  7. Cool, slice and serve with roasted grated coconut and latik.
